October's Featured Fuel: Cowboy Crickets

The idea for crickets as food came from Kathy (CEO) while attending Montana State University. James (COO), her husband, first thought the idea was absolutely crazy. As a nutrition student, Kathy understood the health benefits and the need for sustainability, but she was surprised to see so many people excited to try insects at the 28th annual Bug Buffett at MSU. "The excitement was contagious and I wanted to be a part of a change towards sustainability." - Kathy.

Up until that point, eating insects was still a novel idea. However, since then the movement has gained a lot of traction. This has been shown by celebrity endorsements, like Justin Timberlake and Nicole Kidman, and multiple consumer products containing crickets entering the market. For some, it still takes a while to get over the ick factor, but we have seen over time that perception can change. In the early 70's, no one thought we could convince people to eat raw fish, but now you can find a plethora of sushi restaurants spanning the country.
